Garlic Butter Mussels

Serves 6 Prep 20 min Cook 10 min Total 30 min

Ingredients

Watch out for
  • Burnt garlic turns the whole pot bitter — keep it at a gentle sizzle, never brown.
  • Mussels that stay closed after steaming belong in the bin, not on the plate.
Easy swaps
  • butter: olive oil for a dairy-free version
  • white wine: vegetable stock with lemon
  • parsley: coriander

Main Feast Piece

BBQ Chicken & Sausages

Rosemary chicken thighs and beef sausages grilled over coals until smoky and golden. The no-fuss centrepiece of a summer afternoon.

BBQ Chicken & Sausages

Serves 6 Prep 20 min Cook 22 min Total 42 min

Ingredients

Watch out for
  • Chicken straight from the fridge cooks unevenly — 20 minutes at room temperature first.
  • Flare-ups from sausage drippings char the outside; move things to indirect heat when the flames lick.
Easy swaps
  • beef sausages: lamb or pork sausages
  • chicken thighs: drumsticks
  • rosemary: thyme or oregano

Sweet Confection

Strawberry & Kiwi Pavlova

Crisp pavlova with softly whipped cream, sliced strawberries and kiwifruit. No nuts in sight, just pure summer.

Strawberry & Kiwi Pavlova

Serves 6 Prep 25 min Cook 1 hr 15 min Total 1 hr 40 min

Ingredients

Watch out for
  • Any fat in the bowl — even a trace of yolk — stops the whites whipping properly.
  • Slicing the fruit ahead lets it weep; cut it just before assembling.
Easy swaps
  • caster sugar: granulated sugar, beaten a little longer
  • strawberries: blueberries and raspberries
  • heavy cream: mascarpone folded with a little cream

Accompanying Sides

Roasted Pumpkin Seed Slaw

Shredded cabbage and carrot with roasted pumpkin seeds and a honey-mustard dressing. Crunch without a single tree nut in sight.

Roasted Pumpkin Seed Slaw

Serves 6 Prep 15 min Cook 15 min Total 30 min

Ingredients
Method
Watch out for
  • Toast the pumpkin seeds yourself rather than trusting stale pre-roasted ones — 5 minutes in a dry pan wakes them up.
  • Salting the cabbage first draws out water and keeps the dressing from thinning.
Easy swaps
  • pumpkin seeds: sunflower seeds
  • honey: maple syrup
  • cabbage: shredded kale, massaged with the dressing
