Watercress and Green Apple Soup

Serves 6 Prep 15 min Cook 25 min Total 40 min

Ingredients
Method
Watch out for
  • Sweet apples make the soup cloying; Granny Smith's tartness is the point.
  • Overcooking the watercress dulls both color and flavor - two minutes only.
  • If the soup tastes flat, it usually needs salt before it needs anything else.
Easy swaps
  • green apples: 1 tart pear plus 1 Tbsp lemon juice
  • heavy cream: coconut milk for dairy-free
  • butter: olive oil

Main Feast Piece

Rosemary and Garlic Roast Lamb with Kūmara

A leg of lamb studded with garlic and rosemary, roasted pink and juicy. Kūmara and pumpkin roast in the lamb fat below — the best part of the whole meal.

Serves 6 Prep 20 min Cook 1 hr 30 min Total 1 hr 50 min

Watch out for
  • Skipping the rest leaves the juices on the board; 20 minutes is non-negotiable.
  • Garlic slivers left exposed on the surface burn; push them deep into the slits.
  • A leg roasted straight at high heat is grey outside before the center cooks; the two-stage temperature gives an even blush.
Easy swaps
  • leg of lamb: bone-in lamb shoulder - roast 30 minutes longer at 350°F (175°C)
  • rosemary: thyme plus 1 tsp dried oregano
  • kumara: parsnips

Sweet Confection

Steamed Golden Syrup Pudding with Warm Custard

A tall, dark steamed pudding served steaming with lakes of golden syrup running down its sides. Pour over plenty of hot custard and let winter wait outside.

Steamed Golden Syrup Pudding with Warm Custard

Serves 6 Prep 20 min Cook 2 hr Total 2 hr 20 min

Ingredients
Method
Watch out for
  • A dry pot ruins the pudding; top up with boiling water every 30 minutes.
  • Under-steaming gives a sunken center - test with a skewer before stopping.
  • Cold custard dulls the hot pudding; keep it warm until serving.
Easy swaps
  • golden syrup: treacle for a darker pudding
  • self-raising flour: plain flour plus 2 tsp baking powder per cup
  • custard powder custard: vanilla ice cream

Accompanying Sides

Rewena Bread, Fresh from the Oven

The classic fermented potato bread with its signature sweet-sour crumb and crackling crust. Tear it open while still warm — butter melts straight into it.

Watch out for
  • A cool kitchen stalls the rise; find the warmest spot in the house.
  • Over-flouring the bench makes a heavy crumb; keep the dough soft.
  • Cutting into it hot collapses the interior - wait the full 15 minutes.
Easy swaps
  • rewena starter: 1 1/2 cups active sourdough starter
  • butter: olive oil
  • bread flour: half wholemeal - add 1/4 cup extra water
